This month’s Cooking Light theme is Chicken 25 ways. This is the first week we are delving into the chicken section, tonight is Easy Chicken and Dumplings, later on this week we are trying our hand at Chicken Mushroom Potpie.
I have to say this turned out rather easy for a chicken and dumplings recipe, the hands-on time for the recipe clocks in at 20 minutes, total time at 40 minutes. The vegetables are sautéed 5 minutes until tender, then 1 lb. of diced chicken and 3 cups stock are added to simmer for 10 minutes.
While the chicken is simmering you make the dumplings, a simple mixture of flour, baking powder, tarragon, thyme. You cut butter into the flour mixture and then add milk. These are dropped in and simmered for another 7 minutes.
Oliver’s friend Kale from across the street came over to play and ended up staying for dinner. Oliver prayed for the dumplings ‘to nourish our bodies’.
The recipe turned out excellent with minimal effort needed to produce a decent dumpling and a good stock mixture. The fresh herbs and butter cut into the dough produced a nice pillowy dumpling that was fragrant. The stock and vegetables turned out wonderful. Sarai and I debated whether this was a 2015 favorite …. although not one of the best recipes of the month we will certainly be doing this one again.
