Dinner tonight turned out to be quick and easy, Halibut combined with cherry tomatoes.
After the halibut is fried and removed from the pan a mixture of 1 cup cherry tomatoes and 3 garlic cloves are added.
This sautés for 3 minutes before 2 tablespoons of balsamic vinegar are added. After one additional minute the cherry tomatoes begin to burst. Chopped basil is stirred in and the dinner is complete.
The total prep and cooking time takes less than 20 minutes! The dinner was delightful overall, the balsamic cherry tomatoes paired wonderfully with the light flavor of the halibut. Although we may not complete this exact recipe again the winner of the dish turned out the be the cherry tomatoes side which will certainly be done again.
