Plated: Meatloaf with Parmesan Roasted Broccoli

Round 2 of the Plated adventure was Meatloaf tonight.  I have to be honest, I was less than enthused about this recipe, specifically the simplicity of meatloaf and broccoli.  Doesn’t seem that highfalutin to me. IMG_2295

For this recipe the hands on time is about or 20 minutes, then baking time is about 17 minutes.  After the onions and thyme are sautéed for 10 minutes you lightly mix all of the ingredients together.

The meat is shaped into 2 equal loaves, the broccoli is tossed with olive oil and salted, then covered with parmesan. This bakes for 17 minutes.  I checked the meatloaf with a temperature probe to ensure doneness.

The meatloaf turned out great, the parmesan broccoli was crisp and delicious. Again I found this recipe to be perfect, there is nothing I would change about it.  Good job Plated. Another 2015 favorite.  And it’s kid approved!
