Skillet Chicken and Mozzarella Bake

Tonight we prepped a meal from the April 2015 Cooking Light, Skillet Chicken and Mozzarella Bake.


The recipe is a 35 minute cook, not bad for a week night meal.  The recipe uses only one skillet – I’m a big fan of ‘one dish’ recipes.

After the chicken breasts are cooked and set aside you make a tomato sauce and then return the chicken to the pan to finish for 10 minutes in the oven, covered in panko and mozzarella.

IMG_0477Although not the best recipe ever the kids enjoyed the chicken.  I bought a cheap low grade marinara, this didn’t help.  Next time I would brine the breasts for an hour and upgrade the marinara to something less sweet.

After dinner the kids chipped through a Montesorri kit to unearth a Brachiosaurus.
