Tonight we prepped a meal from the April 2015 Cooking Light, Skillet Chicken and Mozzarella Bake.
The recipe is a 35 minute cook, not bad for a week night meal. The recipe uses only one skillet – I’m a big fan of ‘one dish’ recipes.
After the chicken breasts are cooked and set aside you make a tomato sauce and then return the chicken to the pan to finish for 10 minutes in the oven, covered in panko and mozzarella.

Although not the best recipe ever the kids enjoyed the chicken. I bought a cheap low grade marinara, this didn’t help. Next time I would brine the breasts for an hour and upgrade the marinara to something less sweet.
After dinner the kids chipped through a Montesorri kit to unearth a Brachiosaurus.
