Late Night Snack: The Best-Ever Grilled Cheese

I came home from a late night of clinic and hospital work to find the kids already fed and playing outside.  Catalina found a group of kids out walking a Chihuahua named “Chiquita”.


After bath time when the kids should have been heading upstairs for bed they started complaining of hunger.  Oliver specifically asked for a toasted turkey sandwich, instead of going the easy route and toasting the bread I dug up a bon appetit recipe that I found last week on the plane ride to San Franciso: ‘Best-Ever Grilled Cheese”.

IMG_0503The recipe is a normal grilled cheese recipe with one magical trick: Mayonnaise. You put a thin layer of mayonnaise on the bread before grilling with butter in the pan.

The results were fantastic to say the least – I ended up getting multiple requests for more, both from the children and the spouse.  All told I ran through the entire loaf of bread, a whole bag of cheese slices, and half the turkey lunch meat making more of these.  I was extremely skeptical that mayonnaise would be an improvement, but the crisp results were remarkable.
