Tonight we made chicken sandwiches that were absolutely delightful, recipe courtesy of the May 2015 Cooking Light.
I cheated on a few steps, mainly I used rotisserie chicken from the store instead of cooking up boneless chicken thighs. Also we don’t have a panini maker so I just grilled them in a skillet.
The sandwiches are very unique in that you mix fig preserves and vinegar with the chicken. The sandwich also includes brie and pear slices.
The results are fantastic, definitely a 2015 favorite.
