Smoked Turkey and Swiss Crepes

Tonight we ventured into unknown territory and made a crepe recipe from this month’s Cooking Light. To my memory this is the first time we’ve made a crepe recipe despite 10+ years of subscribing to Cooking Light.

We don’t own a crepe pan so we made due with our cast iron skillet. Sarai whipped up the batter in the kitchen aid mixer and then we let the batter rest while we heated the skillet, we also prepped a ‘dill mayonnaise’ sauce and veggie side.

The recipe has you put in the batter and then add on the turkey and swiss cheese before folding the crepe. The first few didn’t turn out so …. professional looking:

After dinner Catalina took to playing with one of her recent birthday gifts, a bubble blower with princess glasses.
